Mini Quesadillas III

Welcome to part three of the mini quesadilla trilogy. The first focused on leftovers while the second was the OG. Today I have a bunch of crap in the fridge that will make for some even better mini quesadillas so get ready for a wild ride down the cheezy river of tortilla love. Let's begin:
Start by putting down a layer of cheese on a soft taco shell. Once again American cheese slices are not appropriate in this dish or any other, asshole. Then I added the leftover fake taco meat from the chilies rellenos I made the other day. Then I topped it with the black beans, tomato, and jalapeno left over from the salmon tacos. Cook over medium heat until the bottom gets a little crispy and the cheese melts.
Fold in half and repeat. Cook until the tortillas are solid on both sides. Sometimes juices can make them a little mush so you want to make sure that does not end up being the final product. This does not mean burn them, dumbass.

There you have it. Leftovers turned into delightful cheesy treats. I also put the creamy lime shit I made the other day on these too. See? Making these out of leftovers is super easy and delicious. You know you are jealous of my mini quesadillas. Too bad they are mine and you cannot have any, sucker. Eat it.

most people do and you can feel free to add it in lieu of fake meat. Just be sure to cook it first.
