Seared Scallops with a Tomato and Red Onion Relish

The only scallops you have ever had are the size of a dime and taste like shit. They are rubbery little bastards and it doesn't help that you over-cook them. Well get ready for some West Coast action right here folks: wild, diver-caught, never-frozen scallops. Jealous? You should be. Let's begin:Pre-heat your cast iron skillet to med-high heat: like around a 7. Toss on your scallops for no more than 5 minutes and turn them half-way. I like mine a little raw so I don't cook them as long but for your uneducated palate you will want to cook them 5+ minutes depending on their size.

Mix some red onion, tomato, a dash a red wine vinegar, and a pinch of salt and sugar. This is real simple because you want to focus on the incredible scallops, not the garnish. Spoon over and serve. Eat it.

Although my scallops are frozen. I live in AZ though, so I'm lucky to get them at all.

I would have wrapped these in bacon but they were for my vegetarian lady (who eats seafood).

Bacon-wraped scallops rock! For my relish, though, I think I'd prefer a bit of balsamic vinegar instead of red wine vinegar and sugar. Hmm...I bet that relish would be good on grilled halibut, too. I'll try that this weekend.

This really looks great.. you have to love the scallops.. I thought maybe apple cider vinegar and garlic and a pinch of cut up jalapeno's with the onions and tomato's salt and sugar.
