Blue Cheese Zucchini Fritters

I was looking for something else to do with all this freaking zucchini I have left over and another food blogger suggested that I make a zucchini fritters from this recipe from her cooking forum. Well I stole her fritter idea but not her recipe; I had to make it my own. "What did you do differently?" Good thing you asked. I added blue cheese to them and re-arranged the proportions. Now this recipe is perfect. Let's begin:
Start by grating 2c of zucchini. Since you are totally stupid and don't know anything at all, I must let you know that for this to work right you need to figure out a way to press all the water out of the grated zucchini. "Why the hell does zucchini have water in it?" Hey dumbass, zucchinis are more than 95% water. Don't be simple. I layer paper towels and just press the shit out of it. Mix with 3/4c crumbled blue cheese, 1/2c flour, and 1 beaten egg. Form into patties. Heat up 2tbl of butter in a cast iron skillet on med-high. Fry the crap out of those bad boys for a couple minutes per side.
Oh would you look at that! Another masterpiece from the Cooking for Assholes kitchen. Serve with whatever the fuck you want. Eat it.

I saw a recipe for zucchini the other day... pasta dish with chickpeas and zucchini.

You dish looks good too, just I have to eat healthy, so frying zucchini with blue cheese might be too much fat.

I use a clean dish towel (I thought I add the word clean in just in case) to squeeze out the water from zucchini.

I also grate an onion into mix, but not sure how this would work with blue cheese.

These are awesome! I made them last weekend and put it in a bun with a little mayonnaise and Dijon mustard, so it was like a zucchini burger. Awesome. I might make them again this weekend.
