Chocolate Zucchini Bread Muffins

I made these rockstar zucchini muffins a while ago and since I have a crapload more raw zucchini I wanted to make them again. I did, however, want to put a little twist on them and do something interesting. I brought it up in casual conversation with an individual, who will remain unnamed, and this person suggested I add cocoa powder and make chocolate zucchini bread muffins. I was sold. I just omitted the cinnamon and I added 1/3c cocoa powder. You could totally use chocolate chunks in addition to the cocoa powder if you so wish. These were fucking awesome. I would highly suggest making them. Oh wait, you can't. Eat it.

Also it was suggested to me that these be consumed with some cream cheese...not a bad idea

you should try my mom's pumpkin bread with chocolate chips. it's pretty much heaven on earth, and the chocolate in the zucchini bread recipe reminded me of it. I must make some now...

What do you think about yellow squash? I have a ton of it and I'd rather make something with it than continue to give it away or sell it out front like the white trash mama I am;)

I would definitely NOT substitute yellow squash for zucchini.

Maybe if you are luck I will bring you one while you are at work

I made some zucchini muffins w/ the over abundance of squash from my garden and I added chocolate chips and grated carrots to the recipe. Sooo delish! You should try it.
