A Lunch for the Ages

I was pondering what to eat for lunch today after yesterday's Grilled Pepper Tostadas. How could I possibly top that? I visited my local market for inspiration and left with three items: a pork chop, and two chipotle-corn pork sausages. You ready for this motherfucker? Let's begin:

Grill your pork chops and your sausages. Slice up one sausage and place on pork chop. Take your grilled pepper mixture from the other day, dice it up, and mix it with some black beans. Smother pork chop with said mixture. Top with queso fresco and salsa. This was fucking fantabulous and sure as fuck beats your shitty 5 dollar footlong. "What did you do with the other sausage?" Patience, young apprentice.
I decided to make my own buns since those scam artists at the market wanted $4 for four buns! What a bunch of jackasses. I just divided my normal dough in half, baked at 500 deg for 12 minutes, and let it cool before I sliced it. Note the finished Lunch of the Ages in the background. Man that looks so good. Let's see it from another angle.
Good Lordy! This was the perfect end to a perfect meal. Eat it.

Let get this straight, you put a pork sausage on top of a pork chop? Hmmm...did you forget to add bacon? Ham?

Dear Smartass,

Dissolve 1 packet of yeast with 1c hot water (10 min). Add 2c flour, 1tbl sugar, 1tsp salt. Knead for 10 min and form into the shapes you want. Cover with a kitchen towel and let rise for an hour.

Wow, I must admit I am impressed that you made your own roll for the sausage. That proves balls, self-sufficiency, and craftiness. It's a little like making your own lettuce for a salad, but it does inspire respect.

Those who know me know that I try never to pass up a good sausage. I also try to never sound like a Carry On movie, oh how I fail.
Anyway, I want that sausage.

Who makes those? Can you tell if the corn is whole kernelor chopped up, or is it corn meal? I make my own sausages every October, I may give something like this a try.

That first dish looks amazing and you make it sound easy - I'll give it a shot. The fact that you make your own bread just leaves me in awe... can I come over for dinner one night? I'll do dishes. :)
